Ganeten

Ganeten, pronounced “Gah-nay-ten”, is vegetable tempura (deep fried vegetables in batter), a snack representative of Kagoshima.

It is named after the crab due to its resemblance. In Kagoshima dialect, the crab is called “Gane”. While the ingredients and flavours might differ across different regions throughout the prefecture, the common main ingredient is the sweet potato.

Ingredients (for 10 to 15 pcs)

Sweet potato (1 pc, medium sized, about 200g)
Carrot (1/2 pc, medium sized, about 100g)
Chives (4 to 5 stalks)
Batter
Flour (100g)
Glutinous rice flour (50g)
Sugar (40g)
Egg (1)
Water (80cc)
Soy sauce (1.5 table spoon)
Salt (little)
Vegetable oil (little)

Method

1. Julienne the sweet potato and carrot into thick strips, and chop the chives into about 4 to 5 cm pieces   

2. Mix all the batter ingredients

3. Coat the vegetables with the batter, and deep fry them in hot oil at 170 degrees Celcius
